Since you're using an earlier iOS version, it is correct that you wouldn't see the "delete" option in Settings. It sounds like you'd like to put those apps into folders to clear up the Home screen. To do that, you should be able to press and hold any app until the icon shakes, and then you can either drag it onto another app to create a new folder, or drag it to a folder you've already created to store it there.
